Easter Mini-Egg Brownies
These MiniâEgg Brownies are a family favoriteârich, fudgy, chocolateâpacked, and topped with crunchy candyâcoated mini eggs. Pan: Greased 8â9 inch cake pan
Oven: 350°F
ž cup allâpurpose flour
ž cup white sugar
½ cup cocoa powder
2 tsp baking powder
1½ tsp vanilla extract
ž cup salted butter
1 cup semiâsweet chocolate chips (or chopped baking chocolate)
3 large eggs, room temperature
1 package mini eggs (optional but highly recommended)

1. Melt the Chocolate
In a microwaveâsafe bowl, melt the butter and chocolate in 30âsecond increments, stirring between each round. Heat until smooth and melted, but not hot.
2. Mix the Dry Ingredients
In a separate bowl, whisk together the flour, cocoa powder, and baking powder. Set aside.
3. Whip the Eggs & Sugar
Using a stand mixer or handheld mixer, beat the eggs, sugar, and vanilla on mediumâhigh until pale, thick, and fluffyâabout 5 minutes.
4. Combine the Batter
Gently fold the melted chocolate mixture into the whipped eggs.
Then fold in the dry ingredients until almost combined.
Stop mixing when the batter is just incorporatedâoverâmixing reduces fudginess.
5. Bake
Pour the batter into your greased cake pan and bake for 20â35 minutes, depending on your oven.
If using a glass dish, increase the bake time slightly.
The brownies are ready for topping when the center still has a slight jiggle.
6. Add the Mini Eggs
Remove the brownies from the oven, press mini eggs into the top, and return to bake for 2â5 more minutes.
7. Cool & Serve
Let the brownies cool for at least 15 minutes before slicing.
